How to block instant messaging?

My boss has appointed me with the task of figuring out how we can somehow block instant messaging applications from being able to work at the office. How can this be done?

If you don't want to spend a lot of money (or time) on a firewall, you can set up an account at OpenDNS, register your IP, and use it's filtering function to control access to IM, Chat, and a large number of other sites. If you come across a site that isn't being blocked by their filters, you can add it. You can also "whitelist" sites, so if they fall into one of the categories, but you want to be able to access it anyway, you'll be able to. It's free and relatively easy to do.
